Pancakes have been around for centuries, and variations of the dish can be found in many cultures around the world. The exact origin of pancakes is not known, but it's believed that they were first made by ancient civilisations using grains and water.

The modern-day buttermilk pancakes, however, are a more recent invention and are believed to have originated in the United States during the 19th century.

Buttermilk was a common ingredient in many households during that time, and it was often used in baking to add a tangy flavour and tender texture to baked goods.

Let's get started!

WHAT YOU NEED:

  • 1 and 1/2 cups all-purpose flour

  • 3 and 1/2 teaspoons baking powder

  • 1 teaspoon salt

  • 1 tablespoon sugar

  • 1 and 1/4 cups buttermilk

  • 1 egg

  • 3 tablespoons melted butter

  • 1 teaspoon vanilla extract

  • Butter or oil, for cooking

  • Toppings of your choice (maple syrup, fresh berries, whipped cream, etc.)

COOK WITH US:

1. In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar until well combined.

2. In a separate bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until smooth.

3. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to over-mix, as this can result in tough and rubbery pancakes.

4. Heat a non-stick skillet or griddle over medium heat. Add a small amount of butter or oil to coat the surface.

5. Using a 1/4 cup measuring cup, pour the pancake batter onto the skillet or griddle. Cook until bubbles form on the surface of the pancake and the edges start to dry out, then flip and cook for an additional 1-2 minutes on the other side.

6. Repeat with the remaining batter, adding more butter or oil to the skillet or griddle as needed.

7. Serve hot with your favourite toppings.

OUR TIPS FOR YOU:

  1. For even fluffier pancakes: Separate the egg and beat the egg white until stiff peaks form. Fold the beaten egg white into the batter just before cooking.

  2. If you don't have buttermilk on hand: You can make a substitute by adding 1 tablespoon of lemon juice or white vinegar to 1 cup of milk and letting it sit for 5-10 minutes until it thickens and curdles.

  3. Keep the pancakes warm: While you cook the remaining batter, you can place them on a baking sheet in a warm oven (around 200°F).

Enjoy these fluffy buttermilk pancakes for a delicious and satisfying breakfast. You can customise them with your favourite toppings, such as fresh berries, whipped cream, or a drizzle of maple syrup. These pancakes are perfect for a lazy weekend morning or a special occasion breakfast.
