Spaghetti alla Carbonara is a traditional Italian dish that originated in the Lazio region of central Italy. It is believed to have been created by coal miners who needed a hearty and nutritious meal to sustain them throughout their long working days. The name Carbonara actually comes from the Italian word "carbone," which means coal. The dish was made using simple ingredients that were readily available in the mining camps, such as pasta, eggs, and bacon. Today, Spaghetti alla Carbonara is a beloved dish all over the world and is often enjoyed as a comforting and delicious meal.

Let's get started!

WHAT YOU NEED:

  • 1 lb spaghetti pasta

  • 1/2 lb pancetta or bacon, diced

  • 1 cup grated Parmesan cheese

  • 3 large eggs

  • 3 cloves garlic, minced

  • Salt and pepper, to taste

  • Chopped parsley, for garnish (optional)

COOK WITH US:

crispy bacon
  1. Cook the spaghetti pasta according to the package instructions until al dente.

  2. While the pasta is cooking, heat a large skillet over medium heat and add the pancetta or bacon. Cook until crispy and golden brown, stirring occasionally.

  3. In a separate bowl, whisk together the eggs, Parmesan cheese, garlic, salt, and pepper until well combined.

  4. When the pasta is cooked, drain it and reserve 1/2 cup of the pasta water.

  5. Add the pasta to the skillet with the pancetta or bacon and toss to combine.

  6. Remove the skillet from the heat, then quickly pour the egg mixture into the skillet, stirring continuously to coat the pasta. The heat of the pasta will cook the eggs and create a creamy sauce.

  7. If the sauce is too thick, add a little bit of the reserved pasta water.

  8. Serve hot, garnished with chopped parsley, if desired.

OUR TIPS FOR YOU:

Here are some tips to help you make the perfect pasta dish:

  1. Use guanciale for an authentic flavour: Swap out the pancetta or bacon for guanciale to give your dish a more traditional taste.

  2. Time your cooking: Make sure you don't overcook the pasta, or it will become mushy and won't hold the sauce well. Follow the cooking instructions on the package carefully.

  3. Experiment with different ingredients: If you're looking for a vegetarian option, try replacing the pancetta or bacon with sautéed mushrooms or roasted cherry tomatoes.

  4. Reserve some pasta water: Before you drain the pasta, be sure to reserve about a cup of the starchy cooking liquid. This water can be used to thin out the sauce if it becomes too thick, or to help the sauce adhere to the pasta more easily. Simply add a bit of the reserved water to the sauce and pasta as needed, and stir gently to combine. With these tips, you'll be able to create a delicious pasta dish that will impress your guests and satisfy your taste buds.

Traditional carbonara sauce is made with raw egg yolks. When the hot pasta is added to the sauce, the heat from the pasta cooks the egg yolks, creating the famous creamy and flavourful sauce. The egg yolk also adds richness and depth of flavour to the dish. However, being raw, it's important to choose fresh, high-quality eggs and to handle them properly. If you're uncomfortable using raw eggs, there are alternative recipes that use a cooked egg-based sauce instead.

Spaghetti alla Carbonara is a classic Italian dish that is loved by many for its indulgent flavours and creamy texture. It's a perfect choice for a fancy dinner party or a cozy family night in. You can serve it in a large pasta bowl or a flat plate and garnish it with chopped parsley or more grated Parmesan cheese. Pair it with a glass of red wine and some garlic bread to complete the meal.
