WHAT YOU NEED:

(for 6-8 people)


  • 450 g chicken breast, diced

  • 300 g spanish chorizo, sliced

  • 450 g shrimp, peeled and deveined

  • 500 g mussels, scrubbed and debearded

  • 1 large onion, chopped

  • 4 garlic cloves, minced

  • 1 red bell pepper, chopped

  • 1 green bell pepper, chopped

  • 360 g Arborio rice

  • 950-1 l chicken broth

  • 1 teaspoon smoked paprika

  • 1 pinch saffron threads

  • Salt and pepper to taste

  • 1 lemon, cut into wedges

  • Fresh parsley, chopped



COOK WITH US:

  1. Heat a large paella pan over medium-high heat. Add the chicken and cook until browned, then remove from the pan and set aside.

  2. Add the chorizo to the pan and cook until browned, then remove from the pan and set aside.

  3. Add the shrimp to the pan and cook until pink, then remove from the pan and set aside.

  4. Add the mussels to the pan and cook until they open, then remove from the pan and set aside. Discard any mussels that do not open.

  5. Add the onion, garlic, and bell peppers to the pan and cook until softened.

  6. Add the rice, paprika, and saffron to the pan and stir to combine.

  7. Pour in the chicken broth and stir to combine.

  8. Bring the mixture to a boil, then reduce the heat to low and simmer for about 20 minutes, or until the rice is cooked through.

  9. Add the chicken, chorizo, shrimp, and mussels back to the pan and stir to combine.

  10. Garnish with lemon wedges and fresh parsley before serving.




OUR TIPS FOR YOU:


  1. Use a good quality saffron for the best flavour: When it comes to cooking a delicious and perfectly seasoned dish, even small details can make a significant impact. In the case of saffron, using a good quality one can make a world of difference in the flavor of your dish. Look for saffron that is bright red and has a strong aroma. The threads should be plump and not broken. If you're not sure about the quality, try buying from a reputable source.

  2. Make sure to scrub the mussels well before cooking: When cooking with mussels, it's essential to clean them well before cooking. Not only does this remove any sand or debris, but it can also eliminate any bacteria that may be present. Start by soaking them in cold water for at least 20 minutes to help release any sand or grit. Then, scrub the shells well with a stiff brush under running water. Be sure to discard any mussels that are already open or have cracked shells.

  3. Don't stir the rice too much while it's cooking: Rice can be a tricky ingredient to cook perfectly. One mistake that many people make is stirring it too much while it's cooking. While it may seem like you need to stir it frequently to prevent sticking, this can actually cause the grains to break down and release excess starch, resulting in a sticky and mushy texture. Instead, start by rinsing the rice well before cooking to remove any excess starch. Then, add the rice to the pot with the appropriate amount of liquid, bring it to a boil, and then reduce the heat to a simmer. Cover the pot and let the rice cook undisturbed until it's fully cooked. When it's done, fluff the rice with a fork, and you'll have perfectly cooked, fluffy rice every time.
