WHAT YOU NEED:
2 cups fresh chickpeas
1/4 cup tahini
1/4 cup extra-virgin olive oil
3 garlic cloves, minced
1/4 cup lemon juice
1/4 cup water
2 cloves garlic
1/2 teaspoon ground cumin
Salt and pepper to taste
Water as needed
COOK WITH US:
1. Rinse and drain the chickpeas, place them in a large pot with enough water to cover them by a few inches, and bring to a boil over high heat. Reduce the heat to low and simmer the chickpeas until they are tender, approximately 45 minutes to 1 hour.
2. Drain the chickpeas and rinse them under cold water. Allow them to cool.
3. In the bowl of a food processor, combine the cooked chickpeas, tahini, olive oil, garlic, lemon juice, water, salt, cumin, and cayenne pepper.
4. Process the mixture until it is smooth and creamy, scraping down the sides of the bowl as needed.

5. Taste the hummus and adjust the seasoning as needed.
6. Transfer the hummus to a serving dish, drizzle with olive oil, and garnish with chopped parsley leaves.
7. Serve the hummus with pita bread, vegetables, crackers, or your favourite dipping food.
