  • 60 ml milk

  • 80 g diced bell pepper

  • 60 g diced onion

  • 50 g diced mushrooms

  • 50 g chopped spinach

  • Salt and pepper to taste

  • 25 g shredded parmesan cheese

  • 1 tablespoon olive oil

COOK WITH US

  1. Preheat your oven to 375°F.

  2. In a large bowl, whisk together the eggs, milk, salt, and pepper.

  3. Heat the olive oil in a 10-inch oven-safe skillet over medium heat. Add the bell pepper, onion, and mushrooms and sauté until the vegetables are tender.

  4. Add the chopped spinach to the skillet and cook until wilted.

  5. Pour the egg mixture over the vegetables in the skillet and stir to combine. Cook until the eggs start to set around the edges.

  6. Sprinkle the shredded cheese over the top of the frittata.

  7. Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the eggs are set and the cheese is melted.

  8. Remove the skillet from the oven and let the frittata cool for a few minutes before slicing and serving.

OUR TIPS FOR YOU

  1. Be Creative: Don't be afraid to get creative with the vegetables you use in your frittata. If you don't have the exact veggies listed in the recipe, feel free to switch it up with whatever you have on hand. Zucchini, broccoli, or cherry tomatoes would all be great options that would add a burst of flavor and color to your frittata.

  2. Use a non-stick skillet: To prevent your frittata from sticking to the pan, use a non-stick skillet. This will make it much easier to remove the frittata from the pan and serve it in beautiful slices.

  3. Don't have an oven-safe skillet? No problem: If you don't have an oven-safe skillet, you can transfer the cooked vegetables to a greased baking dish before adding the egg mixture and cheese. This will allow you to finish cooking the frittata in the oven without worrying about damaging your skillet.

  4. Store leftovers properly: Leftovers can be stored in the refrigerator for up to 3 days and reheated in the microwave or oven. Make sure to store the frittata in an airtight container to help it stay fresh and prevent it from absorbing any unwanted odors in the fridge. When reheating, cover the frittata with foil to prevent it from drying out.

There you have it - an easy and delicious breakfast frittata recipe that will have you looking forward to breakfast every morning! Packed with protein and fresh veggies, this frittata is a great way to start your day off right. Plus, it's easy to customise with your favourite vegetables and cheese. Give it a try and elevate your breakfast game!
